Our inspiration.
Almost every Caribbean Island has what they consider to be their staple bottle of Rum. Puerto Rico is not left out of this phenomenon as being home to Bacardi and Barrilitos Rum. Islanders have a deep history of creating traditional wood grilled meals on open fire pits or by using slow-cooking methods that entail digging banana leaf lined holes in the ground to cook mouthwatering meals. When creating this sauce, I decided to combine these traditions to illuminate what many Islanders hold as a fond memory. As Rum is made by fermenting molasses, I decided to infuse this sauce with more molasses, as well as a spiced rum, which adds a unique depth to its flavor profile.
